Ingredients

MAIN DISH

1 red bell pepper, deseeded and quartered
2 cloves garlic, roughly chopped
1 tbsp lemon juice
2 tbsp extra virgin olive oil
½ cup water
1 can chickpeas, rinsed and drained
1 cup unsalted roasted Ps
1 tsp cayenne pepper
1 tsp paprika
1 tsp sesame oil

  • Prep Time -
  • STEP 1

    Skin side up, place the red pepper under a griller or over broiler for 10 minutes, or until the skin is blackened all over. Remove from heat and set aside, covering with a clean dish towel or plastic wrap for 5 minutes to allow the steam to loosen the skin from the flesh. When cooled, peel off blackened skin and roughly chop the pepper flesh into pieces.

  • STEP 2

    In a food processor, combine chopped roasted pepper with remaining ingredients. Blend until smooth, scraping the sides occasionally.

  • STEP 3

    Serve with vegetable sticks or sliced pita bread.
