Ingredients

Chiffon Cake:

¾ cup all purpose flour
½ tsp baking soda
½ tsp baking powder
¼ tsp fine salt
½ cup sugar
2 tbsp vegetable oil
1 pc small egg
2 tbsp ube jam
1 tsp ube extract

Ube Pudding:

3 tbsp ube jam
1½ tbsp cornstarch
1/8 tsp fine salt
¼ cup water
2 pcs egg yolks
3 tbsp sugar
1 tbsp butter

Ube Ganache and Shell:

½ cup milk chocolate chips
½ tsp ube extract
½ cup chocolate chip
½ tsp ube extract

Steps

VIEW WITHOUT STEPS

  • STEP 1

    Sift flour, baking soda, baking powder, salt, and sugar into bowl. Combine oil, egg, ube jam, and ube extract in another bowl. Pour into dry ingredients and mix well until smooth.

  • STEP 2

    Pour into 6x2-inch round tin can and steam 30 – 45 minutes or until a toothpick comes out clean when inserted in the cake. Set aside to cool completely.

  • STEP 3

    For the Ube Pudding, combine NESTLÉ® All Purpose Cream, ube jam, cornstarch, salt, water, egg yolks, and sugar in a sauce pan. Gently heat while whisking until thick. Remove from heat and stir in butter. Transfer into a bowl and set aside.

  • STEP 4

    To make Ube Ganache, gently simmer NESTLÉ® All Purpose Cream, pour into white chocolate chips, add ube extract, and stir until smooth. Set aside to cool.

  • STEP 5

    Pour Ube Pudding into tin can. Pour Ube Ganache and set aside in the refrigerator to cool.

  • STEP 6

    Place chocolate chips in a bowl with ube extract and place over a pot with simmering water. Mix well and pour melted chocolate into the tin to create shell. Set aside in the refrigerator until serving.
