Ingredients

4 pcs eggplant
2 tbsp vegetable oil
4 cloves garlic, minced
1 pc onion, chopped
2 pcs tomato, chopped
1 sachet 8g MAGGI MAGIC SARAP®
6 pcs egg, beaten

Sour Cream

2 cloves garlic, minced
1 tbsp lemon juice
¼ tsp fine salt
¼ tsp freshly ground pepper
2 tbsp sliced spring onion

Steps

VIEW WITHOUT STEPS

  • Prep Time 20mins
  • Cooking Time Cook Time 30mins
  • STEP 1

    Pierce eggplant with a for several times. Roast over an open flame until well charred. Set aside in a bowl and cover for 10 minutes. Peel off the skin and cut into 1-inch pieces. Set aside. (20mins)

  • STEP 2

    Sauté garlic, onion and tomato in oil in a non stick pan. Add eggplant and season with ½ sachet of MAGGI MAGIC SARAP®. (10mins)

  • STEP 3

    Beat eggs and season with remaining ½ sachet of MAGGI MAGIC SARAP®. Pour into the pan with eggplant and stir until barely set. Place a plate on top, flip and carefully slide back in the pan to cook the other side of the torta. (10mins)

  • STEP 4

    Remove from the pan and transfer on a serving plate to rest for 10 minutes.

  • STEP 5

    To prepare Sour Cream, mix NESTLÉ All Purpose Cream, garlic, lemon juice, salt, pepper and spring onion. Serve with Tortang Talong. (5mins)
