Ingredients

Steak Salad:

4 cups arugula
3 slices tenderloin steak, seasoned & grilled
1-2 tbsp pine nuts
3-4 tbsp stewed apples

Stewed Apples

1 pc red apple, cored & cubed
3 tbsp brown sugar
1/3 cup water

Horseradish Dressing:

1/4 cup horseradish
1 tbsp American mustard
1 tbsp grain dijon mustard
1 tbsp sugar
1/4 tsp salt
1/8 tsp ground black pepper
1/2 tsp Worcestershire sauce

Steps

VIEW WITHOUT STEPS

  • STEP 1

    For the dressing, mix all ingredients in a bowl until well combined. Set aside in the chiller until ready to use.

  • STEP 2

    Season steak with salt and pepper. Drizzle with olive oil and cook in a cast iron pan for 1-2 minutes on each side depending on thickness. Set aside to rest for 5 minutes before cutting.

  • STEP 3

    Divide arugula into 3 bowls. Top with sliced cooked steak. Scatter stewed apples around the steak. Drizzle with horseradish dressing and top with pine nuts. Serve.

  • STEP 4

    Stewed Apple Procedure:

    1. Put all ingredients in a pot. Boil over medium heat for 10-15 minutes or until apples are soft and mixture is syrupy.
    2. Set aside to cool.
