Ingredients

2 cups rice flour
1 tbsp baking powder
2 cups sugar
1 cup coconut milk
1 tsp ube extract
4 pcs egg
1 stick butter, melted
1 tbsp butter, softened for greasing the cake pan

  • STEP 1

    Preheat oven 350ᴼF. (20mins)

  • STEP 2

    Sift the rice flour and baking powder in a large bowl. Add sugar and set aside. (5mins)

  • STEP 3

    Whisk coconut milk, NESTLÉ All Purpose Cream, ube extract, eggs and melted butter in another bowl. Pour into dry ingredients and mix until combined. (5mins)

  • STEP 4

    Brush an 8-inch square cake pan butter. Pour cake mixture and bake for 1 hour or until a toothpick comes out clean when inserted in the middle of the cake. Set aside to cool completely. (1h 30mins)

  • STEP 5

    Cut into serving pieces and serve. (5mins)
