Creamy Roasted Excitingly Good Eggplant Dip

Earthy yet refreshing, this comforting eggplant dip will surely feed your loved ones tummies and hearts!

Ingredients:

4 pcs
eggplants
2 cloves
garlic, minced
2 tsp
ground cumin
1 tsp
cayenne pepper
2 tsp
sesame oil
1
lemon
3 tbsp
olive oil
1 tsp
paprika
4 pcs
pita bread, warmed
Salt and pepper

Procedure:


  1. Roast the eggplants in a 200 degree C oven until tender, about 30 minutes. Let cool.

  2. Once cool, peel the eggplant and remove the seeds.

  3. In a food processor, combine eggplant meat with the next 6 ingredients. Blend. Season with lemon juice, salt and pepper.

  4. Chill the mixture.

  5. To serve place in a bowl, garnish with olive oil and paprika on top and pita bread on the side.
