Ingredients

4 pcs eggplants
2 cloves garlic, minced
2 tsp ground cumin
1 tsp cayenne pepper
2 tsp sesame oil
1 lemon
3 tbsp olive oil
1 tsp paprika
4 pcs pita bread, warmed
no measurement Salt and pepper

Steps

VIEW WITHOUT STEPS

  • STEP 1

    Roast the eggplants in a 200 degree C oven until tender, about 30 minutes. Let cool.

  • STEP 2

    Once cool, peel the eggplant and remove the seeds.

  • STEP 3

    In a food processor, combine eggplant meat with the next 6 ingredients. Blend. Season with lemon juice, salt and pepper.

  • STEP 4

    Chill the mixture.

  • STEP 5

    To serve place in a bowl, garnish with olive oil and paprika on top and pita bread on the side.

  • STEP 1
