Ingredients

MAIN DISH

1 ½ kg beef short ribs, cut into 2-inch pieces, blanched
4 cups water
2 pcs bay leaf
1 stick cinnamon
2 pcs whole star anise
3 pcs whole cloves
1 tsp black peppercorn
6 cloves garlic, peeled
4 pcs shallots, peeled
2 thumb-size ginger, peeled
2 stalks lemongrass, white part sliced
1 pc red bell pepper, seeded
2 pcs red chili
2 tbsp vegetable oil
1 ½ cups coconut milk
2 sachets 8g MAGGI MAGIC SARAP®
1 tbsp brown sugar
1 pack 125ml Nestle All Purpose Cream
2 sprigs cilantro
1 pc lime, cut into wedges

Steps

VIEW WITHOUT STEPS

  • Prep Time 3 hrs
  • STEP 1

    Place beef in a pot with water, bay leaves, cinnamon stick, star anise, cloves and peppercorn. Simmer fo while covered 1 ½ hours. Skim off fat as needed. Strain beef and discard bones. Reserve 2 cups beef broth. (2 hrs)

  • STEP 2

    Pound garlic, shallot, ginger, lemongrass, bell pepper and chili using a mortar and pestle into a paste. (10 mins)

  • STEP 3

    Sauté paste mixture in oil for 2 minutes. Add beef and cook for 5 minutes while stirring once in while. (10 mins)

  • STEP 4

    Pour coconut milk and reserved beef broth. Season with MAGGI MAGIC SARAP® and sugar. Simmer until beef is very tender and sauce has reduced. (30 mins)

  • STEP 5

    Stir in Nestle All Purpose Cream. Simmer for another 5 minutes. Transfer on a serving plate. Top with cilantro and serve with lime wedges. (10 mins)

     

    Tip: Beef may be replaced with chicken or goat meat in making Rendang.
